Fish and Cheddar

servings: (2)  4 ounce cod fish fillets

Spray skillet with PAM cooking spraying and heat under medium heat.  Put 2 cod fish fillets in skillet 

Add 2 tablespoon of malt vinegar and keep adding as vinegar evaporates. After several minutes turn fish over add 2 tablespoons of vinegar and cook for 3 more minutes or when fish starts to flake.

Add 1/4 cup of shredded low fat cheese to fish while in pan. Cook until cheese is melted.

Baked Apple - serves 4

Preheat oven to 400 degrees F.

Arrange 4 medium size sliced apples (remove skin) into baking dish and sprinkle on top

2 tablespoon of brown sugar, 
1/4 teaspoon of cinnamon
1/4 wheat germ (for extra fiber)

Cover with tin foil and bake for 10 to 15 minutes
